Charred Cabbage Salad

A recipe has to be pretty solid and healthy for me to follow it from beginning to end exactly the way it is.  If you have green cabbage that you need to get rid of and you are firing up the grill, do this!  While, I love grilled Romaine lettuce, grilled cabbage is so much better!  It keeps its structure enough to retain its crunch.  The flames seem to draw out a sweetness in the cabbage.  Plus, this is done without bathing it in oil before it goes on the grill!  Just spray your grates and in 10 minutes you have the makings of a salad that is sort of a twist on a Maytag/ Ceasar salad....well sorry, no blue cheese or raw egg or anchovies, but a generous mounding of Parmesan cheese and a great garlic, lemon, and olive dressing.  It's super easy and I think would make a big impression on guests.
